Italian Cannoli Cookies

Ingredients

Cookies:

  • 1 cup ricotta cheese

  • ½ cup powdered sugar

  • 1½ cups all-purpose flour

  • ¾ teaspoon baking powder

  • ½ teaspoon cinnamon

  • ½ cup roasted pistachios, chopped

  • ½ cup mini chocolate chips

  • 1 teaspoon orange zest

  • ½ cup dark chocolate, melted

Instructions

  1.  Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2.  In a large bowl, mix together the ricotta cheese, powdered sugar, and orange zest until smooth and creamy.

  3.  Gradually add the flour, baking powder, and cinnamon, stirring until a soft dough forms.

  4.  Fold in the chopped pistachios and mini chocolate chips until evenly mixed.

  5.  Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie for spreading.

  6.  Bake for 12–15 minutes, or until the edges turn a light golden brown.

  7.  Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack.

  8.  Drizzle the melted dark chocolate over the cooled cookies for a beautiful finish.
